National Karahi Gosht Recipe Mix 100gms
Ingredients
-2 tablespoons of ghee -1 teaspoon of cumin seeds -1 large onion, finely chopped -4 garlic cloves, minced -1 teaspoon of ground coriander powder -½ teaspoon of red chilli powder (optional) -½ teaspoon of garam masala powder -2 tablespoons of freshly chopped ginger root
-2 green chillies, chopped (optional) -400g/14oz boneless lamb or beef cubes -3 tomatoes, finely chopped
-3 tablespoons yogurt or cream -A pinch of salt and pepper to taste -A handful fresh coriander leaves, finely chopped -Lemon wedges (or lemon juice) for serving. Instructions: 1. Heat the ghee in a large frying pan over medium heat. Add the cumin seeds and fry for about 30 seconds until fragrant. 2. Now add the onion and garlic; fry until golden brown and soft, about 4 minutes.
3. Add in all the spices – coriander powder, red chilli powder (if using), garam masala – plus the ginger root and green chillies (if using). Fry for a further minute or two until everything is combined together nicely and fragrant again.
4. Add in the cubed lamb/beef pieces into this mixture; combine everything together well so that all pieces are evenly coated with all these spices mix . Fry for at least 8 to 10 minutes on medium high heat whilst stirring frequently so nothing gets burned at bottom or sticks to pan too much . If needed you can sprinkle some water onto it to help prevent burning or sticking too much onto pan during cooking process . Keep stirring often till meat is cooked through nicely( no longer pinkish inside ) & has nice golden outside coating as well . This usually takes around 8 to 12 minutes depending on size & type(lamb/ beef )of meat pieces used here !!
5.. Now add in tomatoes , yogurt/ cream ,salt & pepper into frying pan ; stir everything together till everything is well combined ; simmer with lid on remove from heat once sauce thickens up nicely & gravy coats back of spoon !! This should take around 4 to 6 minutes depending upon natural moisture content present in tomatoes used here ! Sprinkle some freshly minced corriander leaves over it before serving !Serve hot with chapatis / naan breads topped off with a squeeze fresh lemon juice .. Enjoy your delicious Karahi Gosht dish !
