Ingredients:

• 500gms beef, cubed • 2 large onions, thinly sliced • 2 medium tomatoes, diced • 1/2 cup ghee or oil • 2 bay leaves • 6 cardamom pods • 4 cloves of garlic, minced • 1 inch piece of ginger, minced • 3 teaspoons chilli powder • 1 teaspoon garam masala powder • 1 teaspoon coriander powder • 1/2 teaspoon turmeric powder • Salt to taste • Fresh coriander leaves for garnish Directions: 1. Heat ghee or oil in a pan over medium heat. Fry the onions until golden brown. Remove from the pan and keep aside.

2. In the same pan add bay leaves and cardamom pods and sauté for 30 seconds until fragrant. Add garlic and ginger and stir fry for another minute until fragrant.

3. Add in the beef cubes along with chilli powder, garam masala powder, coriander powder and turmeric powder to the pan. Stir fry for 5 minutes or until lightly browned on all sides.

4. Reduce heat to low-medium heat then add in diced tomatoes followed by fried onions from earlier step along with salt as per taste requirement .Mix all ingredients together well .Cover pan with lid leaving it slightly ajar & simmer on low-medium heat for 20 minutes stirring occasionally .If necessary add little water if needed .

5 Delhi Nihari Recipe mix – Remove lid & stir in Delhi Nihari recipe mix & cook uncovered stirring constantly till all liquid evaporates & nihari has thick gravy consistency ,this should take 10 minutes more approx..Garnish with fresh coriander leaves before serving hot !
