Ingredients: -1kg boneless mutton, cubed –
1 tsp red chilli powder –
2 tsp coriander powder –
4 cloves of garlic, crushed –
2 onions, finely chopped -3 tbsp vegetable oil –
3 green cardamoms, lightly crushed -2 black cardamoms, lightly crushed -2 bay leaves -(optional) 2 teaspoons of garam masala spice powder Instructions:
1. In a large bowl mix together the mutton cubes with the red chilli powder and coriander powder. Add in the garlic and mix everything together well. Set aside for 15 minutes to marinate.
2. Heat the oil in a large pan or karahi over medium heat and add in the onions. Fry until golden brown before adding in the spices (green cardamom, black cardamom, bay leaves). Fry for 1 minute before adding in the marinated mutton cubes. Stir fry for 10 minutes before reducing heat to low and cooking for a further 40 minutes or until cooked through thoroughly (covering with a lid will help speed up this process).
3. Once cooked through remove from heat and stir through garam masala if using & serve hot with chapattis/naan breads or rice dishes!
